Origin & History

Cabernet Sauvignon originated in southwest France as a natural cross between Cabernet Franc and Sauvignon Blanc, a parentage confirmed by DNA profiling in 1997. First documented in Bordeaux in the 18th century, it became the backbone of the Médoc's most celebrated châteaux. Its thick skin, late ripening, and resistance to rot made it ideal for Bordeaux's variable climate, and it has since conquered vineyards on every continent.

Growing Regions

Bordeaux's Left Bank—Médoc, Pauillac, and Saint-Estèphe—remains the spiritual home of Cabernet Sauvignon. Napa Valley in California has elevated the variety to cult status, producing some of the world's most sought-after bottles. Chile's Maipo and Colchagua valleys, Coonawarra in Australia, and Tuscany's Super Tuscans all demonstrate the grape's global versatility. Emerging regions in China's Ningxia plateau have recently attracted international attention.

Wine Characteristics

Cabernet Sauvignon wines are typically deep garnet to ruby-purple in color. The nose offers classic blackcurrant (cassis), black cherry, and plum alongside cedar, pencil shavings, and graphite from oak aging. On the palate, the hallmark is firm, structured tannins and refreshing acidity, creating a long, persistent finish. Young wines can feel austere; with age, they develop leather, tobacco, and dried fruit complexity.

The grape's high tannins and acidity make it a natural partner for protein-rich foods. Classic pairings include ribeye steak, rack of lamb, and roasted duck. Hard aged cheeses like aged cheddar or Manchego complement the wine's structure. Hearty stews and dishes with umami-rich mushrooms work beautifully.
